How to prepare mackerel

Filleting a fish is tricky to explain in writing, which is why you should watch fishmonger Rex doing it for real in the video above. Also, this video is a bit bloody in places. If you're squimish, just ask your fishmonger to remove the guts and wash it ready for you to take the fillets off.
