Duck egg on toast recipe
The idea for this Fried duck egg dish came during a weekend away in a favourite hotel of ours in London. We just loved it so created our own version. This is probably one of our most popular dishes.
Ingredients
- 4 Free range duck eggs
- 200 g Wild mushrooms
- 5 g Butter
- 4 Slices wholemeal bread
- 2 pinches Maldon salt & cracked pepper to taste

Step-by-step
- Toast bread & keep warm on plates.
- Fry duck eggs in butter & place them on toast.
- Add a good knob of butter to frying pan, sauté mushrooms for 30 seconds, tossing frequently. Scatter mushrooms around the eggs, add seasoning and serve immediately.
