Elderflower cordial recipe
You know it's summer when the elderflower cordial comes out. Fresh elderflower heads, lemon peelings, sugar and water are all you'll need for a refreshing glass. Remember that it will need four days in the fridge before it's ready to drink.
For best results, dilute with sparkling water or prosecco, lemon slices and fresh mint.

- 100 g heads of elderflower (25 heads approx)
- 2 lemons, peelings removed, and sliced
- 1 kg sugar
- 550 ml water
- 40 g citric acid

Step-by-step
- Heat the water and sugar together, add the citric acid and bring to the boil.
- Pour onto the Elderflower heads, the sliced lemons and the lemon peelings. Stir well, and cover with cling film.
- Keep refrigerated for 4 days and then strain. Vac pack the liquid.
- For best results, dilute with sparkling water or prosecco, lemon slices and fresh mint.
