Cheddar bites with apple and hazelnut recipe
Tom Kitchin's cheddar bites are flavoured with apple and hazelnuts - the perfect party nibble.

- 4 sheets of filo pastry
- 100 g cheddar - diced cubes
- 1 apple - diced
- 20 g hazelnuts
- 10 g melted butter

Step-by-step
- In a mixing bowl, combine the cheddar cheese cubes, diced apple and hazelnuts.
- Drizzle with olive oil and season with salt and pepper. Lay out a sheet of filo pastry and brush with melted butter.
- Cut into four equal size squares.
- Place a spoon full of cheese mix into each square and fold the corners to form a triangle.
- Brush the outside and repeat the process with the left over mix and pastry. Bake in the oven for 6-8 minutes until crispy and serve.
