Lemon lassi recipe
This lassi is really refreshing and the fragrance of the lemon zest is pure summer. Good quality, fresh yoghurt will stop this drink being too tart. I love it – it is better than lemonade and lighter than a milkshake or smoothie. Perfect for a healthy, outdoor life.
Ingredients
- 240 ml good-quality fresh plain yoghurt
- 200 ml water
- 3 tbsp sugar, or to taste
- 2 –3 tsp lemon juice, or to taste
- 1.5 small lemons, finely grated zest only
- 1 cup ice cubes, to serve
- 2 sprigs of fresh mint
- 8.4 fl oz good-quality fresh plain yoghurt
- 7 fl oz water
- 3 tbsp sugar, or to taste
- 2 –3 tsp lemon juice, or to taste

- 1 cup ice cubes, to serve

Step-by-step
- Blend together the yoghurt, water, sugar, lemon juice and zest until light and frothy. Adjust the sugar and lemon to taste. Pour into tall glasses filled with ice cubes and the mint and serve.
