Step-by-step

  1. Set up your barbecue or preheat if using gas for medium high temperature 200C, indirect cooking.
  2. Meanwhile prepare the salmon fillets. Season the fillets with salt, pepper and the lemon zest. Spoon the horseradish on top of each fillet, evenly spreading it out with a spatula.
  3. Arrange the fillets on the wood plank and place in the barbecue, and then put the lid down.
  4. Allow to cook for 10-15 minutes or until the fish has cooked through.
  5. Once cooked, remove from the barbecue. Squeeze lemon juice over the fillets before serving.
