Italian barbecued fish with tomato sauce recipe
A delicious baked fish cooked in tomatoes and capers.
Ingredients
- 2 tbsp extra virgin olive oil
- 2 garlic cloves, peeled and thinly sliced
- 1 x 400g tin cherry tomatoes
- 1 tsp fresh thyme, finely chopped
- 1 tbsp drained capers (optional)
- 4 slices of lemon
- 200 g x 200g pieces of cod or haddock
- 2 tbsp extra virgin olive oil

Step-by-step
- Arrange 4 squares of tin foil on a work surface (25cm x 25cm approximately depending on the size of your fillets). Drizzle the centre of each square with olive oil, add a lemon slice and top with a fish fillet.
- Sprinkle the finely grated garlic over each fish, then pour over the cherry tomatoes, thyme, capers and season with salt and pepper.
- Wrap the foil around each fish to form a parcel, then place on the BBQ. Cook for about 15 minutes or until the fish is cooked through.
