Cauliflower crème brûlée recipe

You can make crème brûlée with cauliflower!
Ingredients
- 12 egg yolks
- 220 g caster sugar
- 200 g cauliflower florets (finely sliced)
- 1 l Greek yoghurt
- 1 tbsp vanilla extract
- 50 g brown sugar

Step-by-step
- Boil the Greek yoghurt, vanilla and cauliflower in a pan. Bring to boil then simmer until the cauliflower is tender.
- Blend in a food processor, and then pass through a sieve.
- Whisk the egg yolks and sugar. Add the yoghurt to the egg mix and pour into ramekins.
- Sit the ramekins in a water bath in the oven at 110°C for 60 mins or until set.
- Once cooled, sprinkle with brown sugar and caramelise with a torch or grill.

Hi jf, Thanks for your comment. You're correct in saying that the cooking time stated is wrong, it should be 60 minutes so thanks for spotting that. However, the amount of ingredients is correct. This is a huge amount of eggs and yoghurt for 4 people. Also the cooking time has been stated as 240 mins. When you look at method it says 60 mins plus of course time to boil up the yoghurt and cauliflower. This discrepancy makes me wonder if the ingredients have been multiplied by 4 also???
