It’s fair to say that Indian dishes and flavours have been a constant in British cooking for hundreds of years and during this time our love affair with curry hasn’t wavered.
What has happened though, is our understanding of Indian food is becoming more specialised. We now look for authenticity and regional variations, as well as lighter, healthier recipes. Perhaps most importantly, it’s now easier than ever to cook Indian dishes at home, and many of us do so on a weekly basis.
A taste of what’s to come
So over the coming weeks we’ll explore the rich world of spices, have advice on Indian salads and desserts, and see what the nation’s top Indian chefs eat at home. We’ll also explore the history of the Pathak’s family, who’ve come a long way from the small shop selling spices behind Euston station.
