Santino Maccagnano-Regan gets messy attempting Scotch eggs

Inspired by Heston, I thought I would try out some of his weird and wonderful creations. This recipe was all about timing as I didn't want to overcook the yolks otherwise there wouldn't have been much point in making them. 

Tricky

After partly boiling the eggs I peeled them and placed them in the centre of the sausage mixture. I was having problems at this point because the eggs were so soft boiled they were splitting but all I had to do was be careful so as not to pop the yolk. Once wrapped up in the sausage casing I encountered yet another problem when a couple of the yolks had burst and I couldn't use those eggs.

At this point it got messy - dunking the eggs and sausage into the flour, egg wash then the breadcrumbs to coat. They were then ready for part two of cooking. Into the fryer they went. After fried they then had to get baked in the oven and then they were ready! They were simple to do I thought but they didn't come without their dificulties. They were DELISH! I was quite surprised that the yolk remained runny even once they had cooled down. 

More Heston

I work in the family-run restaurant, the Staghead Inn, and after trying a few of Heston's brilliant recipes I would like to bring some of his magic to my kitchen. I've also tried out his exploding chocolate gateaux which was a big hit with my friends and family. I've bought Heston's At Home and The Fat Duck cookbooks and have other recipes in line to try including the apple pie caramels and the garden pot tiramisu.
