The term is said to date back to 1892, when the Harvey House chain served discounted meals, heaped on disposable blue plates, to railroad travelers in the Western states. Traditionally the domain of mom-and-pop joints, they typically include meat and three sides with a complimentary drink – though many modern restaurants have now jumped on the blue-plate train, too.
