48. Maine: Mr. Tuna, Portland
It won’t come as much surprise that Portland’s Mr. Tuna is all about seafood. Sushi, sashimi, and a few surprises – including burritos and crispy salmon skin with yuzu mayo – all make use of local ingredients, with bluefin tuna a particular specialty. While the Japanese influence is clear, the menu incorporates flavors from other cuisines, too – see halibut with cilantro, avocado, and Peruvian pepper, and spicy hamachi (yellowtail) with Korean gochujang chili paste. Customers love the ‘halfie hour’ offering half-price hand rolls every day.
