Texas: Coltivare, Houston
The team that runs this farm-to-table bistro takes its ingredients very seriously, sourcing a huge amount of produce from the restaurant’s own backyard vegetable garden. The menu is described as ‘Italian cuisine with a Gulf Coast perspective, dictated by Houston's growing seasons,’ so it’s filled with fresh-tasting delights like the ricotta cavatelli (handmade pasta shells) served with morel mushrooms, and veg-packed sauce. The pizzas are also innovative and incredible – try the one topped with Meyer lemons, grilled radicchio, feta, green onion, and pistachio pesto.
