Tried different methods many times - but a lot of articles should be headed 'how to ruin Christmas by spending two days cooking a turkey - easiest solution i have found is cook half the time in foil, and then without and half that time upside down. This allow the Turkeys own Fat to moisten itself and the bottom is not greasy - every Christmas I am complemented on my juicy Turkey. So 25% in foil upside down. 25% in foil right way up, 25% no foil upside down, and 25 % no foil right way up. The only drawback is that sometime the top of the Turkey can look a little deformed.
