Rich with flavour, this recipe takes roast chicken to a fragrant new level. After being seasoned with preserved lemon, red chilli, fresh rosemary and the juice of a whole pomegranate, the bird is then roasted to perfection. Once rested, the dish is finished with a drizzle of honey and scattered with dukkah, a Middle Eastern seasoning combining herbs, nuts and spices – the recipe calls for a shop-bought blend, but you could easily make your own by grinding together toasted nuts (hazelnuts, almonds and pistachios work well), spices (cumin, coriander, cayenne and fennel seeds), toasted sesame seeds and salt.
