Several types of tamales are eaten during the Guatemalan festive period, including tamales colorados (red tamales) and tamales negros (black tamales). Tamales colorados are stuffed with a thick, flavoursome tomato sauce, roasted red pepper strips, capers, green olives, and chicken, beef or pork. Tamales negros, meanwhile, are darker and sweeter than their red counterparts, due to the addition of chocolate, raisins, prunes and almonds.
