There's almost nothing easier than a chicken traybake, where you put it all in the oven at once and the job's done. This is Cajun-spiced chicken, roasted with lots of vegetables, and flavoured with chilli, garlic and chorizo. Here's a clever twist on a classic schnitzel, where the crumb contains toasted hazelnuts, Parmesan, lemon and fresh herbs. 1. Ancho rub pot-roast chicken
Ideally, you should marinate this Mexican chicken overnight, to really get maximum flavour. Ancho chillies are quite mild and very fruity, and are used in the dry rub for the marinade. The chicken cavity is stuffed with orange, ginger and garlic, to keep the chicken moist. It's served with a crunchy slaw dressed with a punchy orange dressing.
