This recipe offers a nourishing vegan version, where the eggs are replaced with plant-based yogurt. Sautéed leeks and garlic are first mixed with cannellini beans, peas and spinach. Spicy and hearty, this vegetarian stew is incredibly moreish – and mostly requires store cupboard ingredients, so you've probably already got everything you need to make it.
