Top recipes by Irish cooks
It's St Patrick's Day so time to celebrate with some fabulous Irish dishes and recipes by Ireland's top chefs.
We're not the types to lazily chuck a load of potato and/or Guinness recipes at you in an Irish round-up (well, maybe one or two). Instead, enjoy our carefully-researched top recipes cooked by Irish hands.
Cork cook
Cork born-and-bred Ross Lewis is on the Taste Council of Ireland AND he’s cooked for the Queen, so we sure can trust his rib of beef recipe (pictured above). Twelve hours' cooking time (complete with pickled ox tongue) makes this meaty main a challenge, but the melt-in-the-mouth result is worth it.
Wicklow wonder woman
Raised in a tiny little Wicklow village, TV chef Catherine Fulvio loves her sticky pudding oozing with Irish-ness. A good slosh of Guinness, a triple shot of whiskey, and a creamy Guinness sauce makes her apricot slices a potent pud… over 18s only, please.
Meath man
Michelin(-starred) man Richard Corrigan grew up near the coast in Meath, so it seems only right to include his sea bass recipe. Simply pan-fry the fillets and serve with a mushroom, crème fraîche and spinach sauce. Richard’s top fishy tip: always cook your fillets presentation-side down first.

Where would a Top 10 Irish collection be without Rachel Allen? Daughter-in-law of Ballymaloe’s Darina Allen, she’s great at easy-peasy supper ideas like this smoked sausage, bean and root vegetable soup. Parsnips, carrots, great big chunks of sausage… it’s a big ol’ hug in a bowl.

The (younger) Dubliner
Whippersnapper Donal Skehan, born in Dublin in 1986, gave up his rock star career (are there any Streetwize fans in the house?) and turned his attention to food a couple of years ago, creating simple recipes such as these egg parcels. It may look tricky, but all you need is a muffin tray and plenty of pancetta.
Derry Diana
Award-winning cookery writer Diana Henry was throwing dinner parties in her home county of Derry at the tender age of 16. Sticky sweet fruit, flaked almonds and a nutty topping makes her apricot crumble recipe a crowd-pleaser for all ages. Serve with heaps of crème fraîche or whipped cream.
Ballymaloe's finest, take 2
What could be better than that roast-chicken-on-a-Sunday smell? The aroma of roast chicken with added chorizo stuffing, that’s what. Rachel Allen slathers her buttery stuffed chicken with honey before roasting to give it a sticky skin. The perfect finish would be a side of sweet roast root veg.
