Breakfast granola
Homemade granola is made with loads of fresh fruit, rather than those shrivelled pieces of dried mango and tasteless nuts that have been in a storage unit for way too long. Pictured above is Merrilees Parker's recipe, which is made with sweet medjool dates, sesame seeds, bran and walnuts, then served with a big dollop of Greek yoghurt.
English muffins
Not quite a bread bun, these English muffins are made with milk and butter which gives them a really soft centre. You can serve them toasted with butter and jam as per the picture, or as sandwiches with cold cuts of meat.
The perfect accompaniment to a strong cup of tea.
Eggs benedict
If you've got leftover English muffins the next day, eggs benedict is the perfect follow-up. Lightly toast the muffins and top with avocado, tomato, good quality ham, and poached eggs.
You can substitute the ham for smoked salmon if you're after a more luxurious breakfast.
Fried duck egg truffles
Truffles might be a little over-the-top for breakfast, but if you have the necessary opulent ingredients in the cupboard, go for it. Otherwise, follow this recipe for a perfectly fried egg and grind fresh black pepper on top of your yolk.
Great served with a side of butter-fried mushrooms.
Avocado egg cups
Chuck out the stone from an avocado and fill the gap with an egg, then bake the lot. Meanwhile, prepare some watercress and heated chorizo to serve alongside. Dash with balsamic vinegar and tuck in. We don't make baked eggs often enough in the UK, but it's a healthy and easy way of cooking them.
Shakshuka
This straightforward Middle Eastern recipe has a great name, but tastes even better. The base ingredients are onions, garlic, tomatoes, eggs and paprika – everyday stuff. But together, they make a wonderfully fresh tasting breakfast. If you like a shot of heat to jerk you awake in the morning, try adding a pinch of habanero powder to the pan.
English breakfast tortilla
An eight-egg tortilla to set up a family of four for a busy Sunday. It's packed with smoked pancetta (or you can use bacon), mushrooms, four fat sausages, sunblush tomatoes and spring onions. Adjust seasoning to taste and serve with coffee or orange juice. You can make a vegetarian version of this by doubling up on mushrooms and using Tenderstem broccoli instead of sausages.
Breakfast strata
Dig down through the crust of eggs and cheese to discover layers of sausagemeat, bacon and onion.
Popular in North America but not well-known in the UK, we think this 'strata' could still take off here. Give it a go and tell all your friends about this great breakfast dish!
Bacon with mushroom pancakes
Savoury pancakes stacked high with bacon and drizzled with butter and parsley sauce. You might want to cook a poached or scrambled egg instead of bacon if you're watching your salt intake.
Guard your plate, as your fellow diners will happily 'help you out' with your portion once they've demolished their own.
American pancakes with bacon
We can always make room for some sweet pancakes too. The maple syrup's sugariness is offset by a handful of fresh blueberries and rashers of bacon.
This classic American-style breakfast might not be something you can get away with having often, but it's a damn good treat when you do.
