A thick egg tortilla stuffed with olives, chorizo and potato. A very filling brunch dish, this will be a good choice before a busy day of fun activities.
If your mother is a vegetarian, try some chestnut mushrooms sliced thickly and fried instead of chorizo.

Black bean soup
This healthy soup would make a great lunch served with fresh bread or, if you're still full from brunch, as a starter to an evening meal. There's still a bit of a chill in the air right now, but the hint of chocolate and a dash of smoky chipotle mean that this one of the best soups to warm up with.
