What will be the big food trends of 2015?

Which foods will be the big hitters of this year? Here are some predictions.

No one can see the future, but nonetheless, at the beginning of every year, the predictions still come. And the world of food is no exception.

Waitrose had already forecast that South American cuisine – particularly Peruvian – will take off in a big way this year. Now Morrisons has also released its take on what will be big in food in 2015.

What will be popular?

Just like dogs, the Brussels sprout isn't just for Christmas. Apparently. Morrisons says this will be a “key superfood” (mind the marketing buzzword) this year, as it’s easier to get hold of and cheaper than some of the other ‘superfoods’ like kale.

It has also tipped Korean food to be big, particularly street food like Korean fried chicken, and says that freekeh, a Middle Eastern grain, will replace some of the appetite for quinoa.

More unusual food combinations are on the way. Apparently the hybrid to look out for is the crème brûleé scone, and there will be more unusual combos before the year is out. Lovefood created the ‘Monut’ a while back. It’s a cross between a donut and a mince pie. Maybe it’ll be picked up for Christmas 2015?

Finally, comfort food like shepherd’s pie will apparently be in great demand, along with a resurgence in classic British dishes. But people seem to say that every year.

Do I believe them?

It should be taken into account that Morrisons, as a supermarket, has an interest in promoting groceries in general, and perhaps they over-ordered on Brussels sprouts over Christmas and are now trying to shift them. And perhaps their own plans for 2015 will involve the promotion of Korean-style food.

That said, I think the general view of sprouts is becoming less harsh, and with new varieties like Redarling and flower sprouts becoming available, we could well see these gain popularity and be sold in the ‘Big Four' supermarkets rather than Waitrose and specialist outlets.

And Korean food is definitely a winner in my book. Bibimbap is comfort food on a whole new scale, and it’s really easy to make variations on this Bibimbap recipe with whatever you’ve got in the fridge. Meanwhile, bulgogi is Korea’s answer to barbecue, featuring marinated grilled beef, and goes great with a side of fermented, spiced, vegetables called kimchi.

As for freekeh, I’m not so sure. If it receives the same hype as quinoa, I'm sure it will sell through sheer marketing power. But I wonder if people are feeling a little jaded from hearing about supposed ‘super’ grains over the past few years. Weird food combinations, on the other hand, will definitely continue if only as a way to grab headlines. I look forward to seeing the good, bad, ugly and downright bizarre in 2015.

Oh, and shepherd’s pie? Yes please. But then it didn’t go out of fashion for me in the first place…
