We meet Michelin star chef Alyn Williams and chat about ethical food, who inspired him and his killer dish.

Chef Alyn Williams is the passionate force behind the restaurant at The Westbury Hotel in Mayfair, which was awarded a Michelin star just 10 months after opening. 

He spent five years working for Marcus Wareing, cooking some of the best food in England as the head chef at The Berkeley Hotel restuarant, before opening his own place.

He was crowned National Chef of the Year 2012 at The Restaurant Show, after beating Joe McCafferty and Paul Matthews to the spot.

Here he is, talking about who inspired him, what his killer dish is, and how to cook at home.
