Five ways with tomatoes
Growing your own tomatoes this year? Give them the limelight with one of our top five tomato-based recipe ideas.
Tomato risotto
A baked risotto, topped with a swirl of sage, rosemary and thyme pesto, then finished with a Parmesan crisp. Nicola Graimes uses passata and sundried tomato paste to give her dish its characteristic earthy red colour, and includes halved walnuts in the recipe for added texture.
Tomato tart with goats’cheese
A very pretty picture indeed. This colourful Mediterranean tart is perfect for summer picnics, and chef Daniel Galmiche recommends using Sainte-Maure de Touraine goats’ cheese for its lovely, nutty aroma. Top with oven-dried tomatoes, or, if short on time, sun-dried tomatoes from a jar.
Cod, coriander, and tomato parcels
Quick, easy, and big on flavour – fish ‘en papillotte’ style (cooked in parcels) locks all the goodness inside, and here the tomatoes pack just as much of a punch as the cod does. Arrange your stacks on greaseproof paper, starting with chunky slices of tomato, then coriander, then the cod.
Chunky tomato soup
Perfect come rain or shine, tomato soup is one of Britain’s best-loved dishes. Everyone has their favourite recipe – and this is ours. Brian Turner makes his with single cream, carrots, celery, onion, basil, parsley, thyme, and no fewer than 675g of tomatoes – plus more for garnish!
Butter bean bruschetta
Oregano, butter beans and finely chopped baby plum tomatoes, drowned in garlicky olive oil and piled on top of thickly sliced rustic bread makes great bruschetta.
