How to use up your Easter leftovers

Lamb, eggs, and hot cross buns still lying around the kitchen? Here's how to use them up.

Got leftovers after Easter? Here are some great ways to use up lingering eggs, lamb, and hot cross buns.

Eggs

You might've bought eggs for the kids to decorate but still have half a box or more spare. We reckon that brunch is the dish of the day on a bank holiday Monday, so why not try one of these fast and tasty meals after your lie-in? 

These spicy scrambled eggs are a nice twist on a simple breakfast dish, and you can make it into a larger meal with the addition of a handful of rocket and watercress with some toasted pitta bread strips on the side. Alternatively, serve as part of a traditional English breakfast with sausages, a grilled tomato and bacon.

This recipe for veggie baked eggs is very versatile, as you can use pretty much any vegetables that you like. So it's perfect if you've got greens left over from the day before. Throw in a few mushrooms and maybe a handful of cherry tomatoes on top to brighten it up.

Lamb

Chances are you cooked a massive joint of lamb yesterday and now want something to do with the leftovers. Hopefully these recipes will inspire you!

Saffron, cinnamon, dried apricots and honey are used to make this Persian-style lamb stew. Since your lamb is already cooked, you don't necessarily need to follow the first step, which saves a little time. Sometimes meat gets a little dry once left overnight, but this recipe slow cooks the meat for over an hour, meaning that it will be beautifully tender at the end.

If you bought a bone-in lamb joint for Easter, hold onto the bone and use it to add depth to the flavour of a lamb dopiaza, making it even more rich. It's another slow cooked recipe, meaning you're practically guaranteed tenderness, and the Indian spices are a nice contrast to the British roast you enjoyed the day before.

A straightforward lamb ragu is a suitable choice for those who don't fancy a spicy follow-up to their roast. Retain the roasting juices from your lamb if you plan on making this, and mix them with red wine, herbs and vegetables to make this delicious meat sauce, which is excellent served with potatoes, pasta or polenta.

Hot cross buns

Heston Blumenthal knows what to do with those hot cross buns lurking on the counter. Everyone is probably sick of them by this point, but this take on bread and butter pudding could reinvigorate some interest in them, with a splash of spiced rum, a handful of currants and a generous portion of homemade golden syrup custard.
