Bad weather outside? It might be tricky to get to the shops, so here are 10 recipes made from store cupboard essentials.
Shakshuka
Onion, garlic, tinned tomatoes, a couple of eggs and, if you have it lurking around somewhere, a pinch of paprika too – that’s all you need to make shakshuka (pictured above), an Israeli breakfast recipe. Shakshuka is popular throughout the Middle East, and this simple version will take little more than five minutes to make.
Jo Pratt's rostis are made from apple, potato, cheese, ham, crème fraîche, chopped chives and a little mustard. Just omit the crème fraîche if you don’t have some in the fridge already, and if there’s no ham either, just leave it out and add something simple like tinned sweetcorn.
Egg fried rice is the perfect accompaniment to any Chinese dish, but if you up the portion size a bit it can also be a satisfying main. All you'll need is rice, egg, petit pois (or just a handful of peas from the bag in the back of your freezer) and spring onions, plus plenty of soy sauce.
This mushroom risotto was part of a series of recipes all of which could all be made for around £3. If you have suitable leftover booze – say a glass of white wine or white vermouth – add to the rice before starting on the stock, similarly cooking it until absorbed.
This channa masala is a wonderful recipe to make when you want to cook cheaply but eat healthily. If you don’t have the spices to hand then just add more garam masala powder to add more flavour. This recipe will cost you less than £5 to make.
Spice up a very easy scrambled eggs on toast dinner with whatever fresh herbs you have lying around – parsley, chives or tarragon all work well. This recipe uses almond milk as it’s dairy-free, but if you’ve no problem with dairy then just use normal milk instead.
Chances are you have a couple of onions, a bit of cheese and some leftover bacon in your fridge. Make the most of those leftovers with this tasty gratin recipe. Serve with is a slice of good bread to dip the oniony juices up (otherwise use a spoon – please don’t waste them.
The perfect there’s-nothing-left-in-the-fridge recipe. All you need, of course, is flour, eggs, milk and a tiny drop of vegetable oil to grease the pan. You can flavour your pancakes with whatever’s hanging around – lemons, orange, chocolate, or even something savoury, perhaps.
