We’re cheating a bit with this one (pictured above). It's actually from The Great British Book of Baking, a collection of recipes by all sorts of chefs. Classic ingredients include unsmoked back bacon, boned shoulder of pork, fresh sage, anchovy essence and jellied stock.

TV chef Lotte Duncan unusually combines lamb with orange, cranberries, honey and mint. Lotte says: “The idea of fruit and meat is very English, very old and very delicious." The proof is in the eating.
