Don't throw away all those spare sausages and sweetcorn. Here's how to use them.

It's not uncommon for us to find that our eyes are bigger than our stomachs during barbecue season. But if you find yourself with a pile of leftovers, don't throw them away. These recipes should provide plenty of inspiration as to how you can use them up.

African peach and chicken tagine

Choose the ripest peaches you can find and the fattest, fleshiest Kalamata olives to stir in with ginger, garlic and a smattering of North African spices. You could substitute the chicken for a tougher meat – whatever is left over from your barbeque – and cook this low and slow for a really satisfying dinner.

If you've got leftover sausages, dice them up and use them in this risotto. While the recipe suggests using chicken sausages, any will work. And you could use other meat if you don't have sausages. You could also add vegetables like sweetcorn or peppers into the mix.
