Ed Baines matches smoked chicken breast (a meat very low in fat, of course) with fennel, feta, avocado and mandarin segments for a colourful smoked chicken salad. Ed’s top tip: to make a fun, healthy salad dressing, just boil a cup of pomegranate juice until syrupy.
The Ramsay one
Gordon Ramsay’s inspiration for this recipe came from a heavenly satay experience in Penang. It will take you 30 minutes to prepare his chicken satay with peanut sauce reicpe and you’ll need to find a can of coconut cream, but the end result – Thai-style charred chicken chunks in a crunchy sweet sauce – is so worth it.
