Top five chicken recipes

Chicken is too often a last, bland resort for dinner. But with a little bit of TLC and a few fancy ingredients, it can really shine. We give chicken the limelight with our top five recipe collection.

The curried one

Cheat your way to an authentic chicken biryani (above) in only one hour with a jar of Patak’s Balti or Madras Paste and the three C’s: cinnamon, cardamom pods and coriander. Feed it to your family for maximum brownie points.

The chicken ‘n chips one

Ahhh… a big bucket of posh KFC is just the ticket on a Friday night. It’s easy to make your own perfect fried chicken: just coat the drumsticks in spiced seasoned flour, then fry until golden in batches. Don’t forget to serve alongside ‘slaw and chunky chips – both homemade, of course!

The one-pot one

Queen of one-pots Rachel Allen scores again with her leek, tarragon, new potato and chicken open-pot roast recipe. Eat piping hot, straight from the oven, with crusty bread and butter for a cheap ‘n cheerful midweek tea.

 

The healthy one

Ed Baines matches smoked chicken breast (a meat very low in fat, of course) with fennel, feta, avocado and mandarin segments for a colourful smoked chicken salad. Ed’s top tip: to make a fun, healthy salad dressing, just boil a cup of pomegranate juice until syrupy.

The Ramsay one

Gordon Ramsay’s inspiration for this recipe came from a heavenly satay experience in Penang. It will take you 30 minutes to prepare his chicken satay with peanut sauce reicpe and you’ll need to find a can of coconut cream, but the end result – Thai-style charred chicken chunks in a crunchy sweet sauce – is so worth it.
