Santiago Guerrero has been Head Chef at Iberica Food & Culture in London since its opening in 2008. Santiago manages the day-to-day operations of the kitchen and together with two - Michelin starred chef Nacho Manzano, creates the seasonal Spanish tapas menu. His menu focuses on the very best in Spanish gastronomy with a strong emphasis on the quality and provenance of ingredients. Santiago has honed his skills at some of the best restaurants and hotels in Spain and the UK, including the Hacienda Benazuza El Bulli Hotel, El Celler de Can Roca, three Michelin-starred Waterside Inn and Melia White House Hotel before joining the team as Head Chef at Iberica. www.ibericalondon.co.uk
