Phil Thompson
Phil Thompson joined Auberge du Lac on the Brocket Hall Estate in Hertfordshire in 2002, taking on the role of Executive Chef in 2005. In 2009, he was awarded a much coveted Michelin Star, which he successfully retained in 2010 and more recently, 2011, ensuring that Auberge du Lac remains the only Michelin-starred restaurant in the county of Hertfordshire. Thompson is insistent in being hands on, combining the best traditions of French cooking with his own essentially English background. An inspired chef whose career is in ascent, he sources and uses only local produce and has in fact been known to utilise nettles, mushrooms and herbs from the Brocket Hall Estate itself. This passion for fresh produce results in Thompson changing his menus regularly, so that they coincide with seasonal ingredients.
