Gluten-free waffle churro dippers recipe
Fancy churros without the need to deep-fry them? Well, great news: that’s exactly what these waffle churro dippers are for! Simply create and slice the waffles, and roll in cinnamon sugar. When dipped in chocolate sauce, nobody will notice the difference!
Tip: For the following dietary requirements, try these substitutions.
Dairy-free: use dairy-free milk.
Lactose-free: use lactose-free milk.
Low FODMAP: use lactose-free milk and maple syrup instead of honey.
Vegan: use dairy-free milk, replace the egg with ½ a mashed ripe banana and use maple syrup instead of honey.

- 150 g gluten-free self raising (self rising) flour
- 5 tbsp caster (superfine) sugar
- 0.5 tsp gluten-free baking powder
- 250 ml milk
- 1 medium egg
- 2 tsp vanilla extract
- 1 spray of vegetable oil, in a spray bottle, as needed
- 5.3 oz gluten-free self raising (self rising) flour
- 5 tbsp caster (superfine) sugar
- 0.5 tsp gluten-free baking powder
- 8.8 fl oz milk
- 1 medium egg
- 2 tsp vanilla extract
- 1 spray of vegetable oil, in a spray bottle, as needed

Step-by-step

Start heating up your waffle maker. All waffle makers vary, so follow the instructions of your particular machine.

In a large mixing bowl, combine the flour, sugar and baking powder. In a jug (pitcher), beat together the milk, egg and vanilla extract.

Create a well in the flour and pour in the milk and egg mixture while whisking thoroughly. After 30 seconds of whisking, it should be nice and smooth.

Once your waffle maker has heated, spray with vegetable oil and pour in one measure of your batter (pour in roughly 60ml/2fl oz batter at a time using a ¼ measuring cup). Close the lid and cook for 3-4 minutes until consistently golden and crisp on the outside.

Cut each waffle into three long strips, then mix the cinnamon sugar ingredients on a large dinner plate. While still warm, roll each waffle strip on the plate until well-coated.

For the chocolate sauce, grab a small saucepan and place over a low heat. Add the dark chocolate, milk and honey or maple syrup and allow to melt. Stir until well combined and serve as a dip.
