Air fryer pork belly recipe
Who needs an oven when you can make this delicious pork belly centrepiece from scratch in an air fryer instead? Just add sea salt and olive oil, then leave it to do its thing. It should be wonderfully tender yet crisp on the outside.
This delightful dish makes a wonderful show-stopper for your Sunday roast. It's also an impressive alternative to turkey on Christmas Day, or main event for a Boxing Day meal in place of the usual ham. It's best served with all the classic trimmings – roast potatoes, carrots, pigs in blankets, Brussels sprouts and a good glug of gravy.

- 1 kg piece of boneless pork belly, rind scored
- 2 tsp sea salt flakes
- 1 spritz of olive oil spray

Step-by-step
- Preheat the air fryer to 200°C/400°F for 3 minutes.
- Pat pork dry with paper towel. Rub salt into pork rind.
- Place the pork in the air fryer basket and spray with oil.
- Set timer for 25 minutes and cook until the rind crackles.
- Reduce temperature to 160°C/320°F. Set timer for 30 minutes and cook until pork is tender and cooked through.
