Lemon meringue cocktail recipe
The best way to end the night is with an indulgent dessert and a tipple, so why not combine both? This sweet concoction is inspired by the delicious flavours of a lemon meringue pie, with a dainty meringue kiss on top (which can be homemade or store-bought). If you don't have a cocktail shaker at home, a glass jar – like the sliced lemon jar you'll need for this recipe – is an excellent alternative: simply add your ingredients to the empty jar, top with ice, close the lid and shake.
Please note: For the sugar syrup, combine equal parts sugar and water in a small saucepan and bring to the boil, constantly stirring until the sugar has dissolved. Cool down and store in a sealed jar. This syrup is used in many cocktails and can be refrigerated for up to a month.

Step-by-step
- Mix the Limoncello, vodka, sugar syrup and 15ml (0.5 fl oz) lemon juice from the jar in a shaker with ice. Strain and pour into a chilled martini glass.
- Top the glass with double cream (heavy cream), and garnish with a meringue kiss and a sliced jarred lemon. Serve with a lemon shortbread biscuit for extra indulgence.
