Vegan Christmas leftover sandwich recipe
Bursting with all the tastiest components of a veggie roast, this loaded leftovers sandwich might just be better than Christmas dinner itself. The star of the show? Fluffy on the inside, crispy on the outside stuffing patties, hot from the oven.
When it comes to putting this hearty sandwich together, almost anything goes: simply spread thickly sliced fresh bread with cranberry sauce, then start layering up whatever festive ingredients you have to hand.
Our recipe combines those all-important stuffing patties with leftover roasted vegetables, braised red cabbage, a handful of spinach or kale (or any other winter greens) and a few pickled red onion slices, for a lovely tangy crunch.
Whatever tantalising titbits you end up including, be sure to slather your creation with a good dollop of vegan mayo before tucking in.

- 4 slices thick white bread
- 1 tbsp cranberry sauce
- 1 handful leftover roasted vegetables (carrots and parsnips work well)
- 250 g pouch Merchant Gourmet Spiced Grains & Chestnuts (or cooked stuffing)
- 4 tbsp leftover braised red cabbage
- 4 tbsp spinach or kale
- 2 tbsp pickled red onion slices
- 1 tbsp vegan mayonnaise

Step-by-step
- Preheat the oven to 180°C/160°C fan/350°F/gas mark 4.
- Make up the Merchant Gourmet Spiced Grains & Chestnuts according to packet instructions (if using). Shape this, or your leftover stuffing, into small patties.
- Place on a lightly oiled baking tray (baking sheet) and bake for 15 minutes.
- Spread the bread with cranberry sauce, then layer up your ultimate leftovers sandwich as follows: roasted root vegetables, hot stuffing patties, braised red cabbage, kale or spinach (or other winter greens), pickled onions and mayo.
