Barbecued whole spiced cauliflower recipe

A spicy barbecued whole cauliflower. You could also cook this in a griddle pan if you prefer.

Ingredients

  • 1 cauliflower
  • 4 cloves of garlic, finely grated
  • 1 tbsp freshly grated ginger, finely grated
  • 1 tsp smoked paprika
  • 1 lemon, juice only
  • 125 ml Greek yoghurt
  • 1 small handful parsley, chopped

Step-by-step

  1. Remove the outer leaves of the cauliflower. Place in a large pan, cover with boiling water and a little seasoning, and then simmer for about 7-10 minutes, until almost cooked but still firm. Drain.
  2. Combine the garlic, ginger, smoked paprika, lemon juice and yoghurt with a little seasoning. Use 1 tsp of the yoghurt mixture to rub over the cauliflower, setting the rest aside.
  3. Wrap the cauliflower in tin foil and cook on a preheated barbecue for 10 minutes, rotating until cooked through. Serve with the reserved yogurt and garnish with the chopped parsley.
