Soup of India recipe
Cucumber, courgette and tomato blended into a seasoned soup to be served cold.
Ingredients
- 300 g cucumber
- 2 courgettes/zucchini
- 2 ripe tomatoes
- 6 sprigs coriander/cilantro
- 1 tsp ground cumin
- 1 tsp ground ginger
- 1 lime, juice only
- 2 tsp sesame oil
- 0.5 tsp fine salt
- 10.6 oz cucumber

Step-by-step
- Peel the cucumber. Slice about 50g finely and set these cucumber slices aside for the garnish. Chop the remainder of the cucumber finely.
- Wash the courgettes and the tomatoes and chop finely.
- Blend all of the main ingredients together to obtain a smooth purée. Taste and adjust seasoning if necessary.
- Serve the soup in shallow bowls and garnish with the reserved cucumber slices, the caraway seeds and a sprinkling of turmeric.
