Mojito mocktail recipe
Feel free to add rum – although of course this does out-do the health benefits somewhat…
Ingredients
- 1 perfectly ripe avocado
- 1 lime, juice only
- 100 ml (preferably light / reduced fat) coconut milk
- 2 tbsp chopped fresh mint leaves
- 3 tbsp agave syrup (or use honey)
- 1 tsp good quality vanilla extract
- 200 ml semi-skimmed milk

- 1 lime, juice only
- 0.4 cup (preferably light / reduced fat) coconut milk
- 2 tbsp chopped fresh mint leaves
- 3 tbsp agave syrup (or use honey)
- 1 tsp good quality vanilla extract
- 0.8 cup semi-skimmed milk

Step-by-step
- Cut the avocado in half, lengthways, remove the stone with a teaspoon and scoop the soft flesh into a blender / smoothie maker. Add everything else and whizz up!
