Quesadillas recipe

A great thing to do with leftover meat like chicken or turkey is to make quesadillas which is this lovely sort of Mexican pancake. Cooking doesn't get much easier than this!

Ingredients

  • 2 handfuls Chicken or Turkey
  • 2 Tortillas
  • 1 Red Onion
  • 1 Red Chilli
  • 1 handful Cheese of choice
  • 1 handful Coriander
  • 1 pinch Salt and Pepper

Step-by-step

  1. Shred the turkey and place on a tortilla.
  2. Chop the onion and chilli and sprinkle over tortilla.
  3. Place chunks of cheese onto the tortilla.
  4. Rip some coriander and sprinkle on top of tortilla.
  5. Season with salt and pepper.
  6. Place another tortilla on top.
  7. Cook the quesadilla in a griddle pan or frying pan over a medium heat giving it about 2-3 minutes on each side.
  8. Remove from the pan, cut into quarters and serve.
