Simon Rimmer's chocolate fudge pudding recipe

Simon adds an unusual ingredient to a classic chocolate fudge cake.

Ingredients

  • 450 g Dark chocolate, minimum 70 per cent cocoa solids
  • 200 g Unsalted butter, plus extra for greasing
  • 10 Free-Range eggs
  • 3 tbsp Soured cream
  • 300 g Caster sugar
  • 1 Vanilla pod, split, seeds scraped out
  • 200 g Plain flour
  • 1 tsp Ground cinnamon
  • 0.5 tsp Baking powder
  • 10 ml Pepper sauce
  • 15.9 oz Dark chocolate, minimum 70 per cent cocoa solids
  • 7.1 oz Unsalted butter, plus extra for greasing

  • 1 Vanilla pod, split, seeds scraped out

  • 1 tsp Ground cinnamon

  • 0.4 fl oz Pepper sauce
  • 15.9 oz Dark chocolate, minimum 70 per cent cocoa solids

The sauce
  • 250 ml Whipping cream
  • 60 g Unsalted butter
  • 100 g Cocoa powder
  • 100 g Caster sugar
  • 100 g Soft dark brown sugar
  • 0.5 tsp Ground cinnamon
  • 8.8 fl oz Whipping cream
  • 2.1 oz Unsalted butter
  • 3.5 oz Cocoa powder
  • 3.5 oz Caster sugar
  • 3.5 oz Soft dark brown sugar
  • 0.5 tsp Ground cinnamon
  • 1.1 cups Whipping cream
  • 2.1 oz Unsalted butter
  • 3.5 oz Cocoa powder
  • 3.5 oz Caster sugar
  • 3.5 oz Soft dark brown sugar
  • 0.5 tsp Ground cinnamon
To serve
  • 100 g Strawberries and whipped cream to serve
  • 3.5 oz Strawberries and whipped cream to serve
  • 3.5 oz Strawberries and whipped cream to serve

Step-by-step

  1. Melt the chocolate and butter in a bowl over simmering water.
  2. Whisk the eggs, sugar, soured cream and vanilla over simmering water for 5 minutes until fluffy and voluminous. Stir in the chocolate mixture.
  3. Sift the dry ingredients together, fold into the chocolate, together with the pepper sauce. Spoon mixture into a lined ovenproof dish and bake at (160c/gas mark 3) for about 1 hour.
  4. Sauce - put it all in a pan and stir for 4-5 minutes until gooey and yummy. Serve a piece of pudding covered in sauce and a few delicious strawberries and cream.
