Gammon and pea soup recipe

Step-by-step
1) Heat the oil in a large frying pan and fry the onion for 4-5 minutes. Add the stock and peas and bring to the boil.
2) Reserve 100g (4 oz) gammon and add remaining to the soup. Cover and simmer for 10 minutes.
3) Blitz with a hand held blender until smooth and stir in the reserved gammon and cook for 1-2 minutes.
Cook’s tip
Try using leftover bacon or ham instead of gammon.
Use up
Use up leftover gammon and stock made from the turkey bones to avoid waste.
Variations
Frozen mixed bean and pea medley can be used too.
Extra flavour
Add some cream at the end for a rich creamy flavour.
Freezer advice
Freeze in portions for ease of defrosting and reheating.
Vegan and vegetarian options
Omit the gammon and use vegetable stock.
