Spiced pumpkin butter recipe
This delicious spiced pumpkin butter is a treat with everything from pancakes to granola and will keep in the fridge for roughly a week.
Ingredients
- 850 g canned pumpkin purée
- 120 ml apple juice
- 250 ml maple syrup
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1 pinch fresh nutmeg
- 2 tsp vanilla bean paste

Step-by-step
- Combine all the ingredients in a pan with a pinch of salt.
- Bring to the boil, then reduce the heat and simmer, uncovered, for 20–30 minutes, stirring frequently, until it has thickened and turned a dark orangey-brown.
- Scoop into a bowl and allow to cool completely.
- Spoon into new, sterilised jars and decorate if you're planning to give as a gift.
