Easy pineapple sorbet recipe

Desserts don't come much easier than this zesty pineapple and lime sorbet.

Ingredients

  • 2 x cans (approx 435g/15oz) pineapple chunks in juice (we like Del Monte Gold)
  • 2 limes, zest and juice
  • 50 g coconut flakes, toasted

Step-by-step

  1. Lay the pineapple chunks and the juice on a high-sided lined tray that will fit in your freezer.
  2. Place in the freezer for a minimum of 5 hours or ideally overnight.
  3. Remove the pineapple from the freezer and let it thaw for about 5 minutes. Break up the frozen pieces if you can and then add to a blender with the zest and juice of both limes.
  4. Blitz until smooth and creamy, stopping and stirring occasionally then spoon into a container.
  5. Place back in the freezer for 1–2 hours then remove from the freezer 15 minutes before serving. 
  6. Serve with extra lime zest and coconut flakes.
