Salted caramel puffed rice bars recipe
Sweet and salty caramel puffed rice bars, ideal for an indulgent afternoon treat. These delicious no-bake puffed rice bars are made using melted sugar-free chewy caramels, an ingenious alternative to traditional caramel. The real challenge is having just one!
Ingredients
- 1 amount of low-calorie cooking spray
- 135 g sugar-free chewy caramels
- 3 tbsp semi-skimmed milk
- 0.5 tsp sea salt
- 80 g puffed rice cereal

Step-by-step
- Spray an 18cm (7in) square cake tin with a little low-calorie cooking spray and use to grease the tin. Line the tin with greaseproof paper.
- Place the caramels, milk and ¼ tsp of salt in a small saucepan and place over a low heat, stirring continuously for 7-10 minutes until just melted. Remove from the heat immediately.
- Place the puffed rice cereal in a large bowl and pour in the caramel mixture. Stir until well combined and tip into the prepared tin. Spread the mixture out evenly and press down slightly. Sprinkle with the remaining ¼ tsp of salt.
- Chill for a minimum of 2 hours, but preferably overnight to give a firmer result.
- Remove from the tin and cut into eight bars.
