Chicken fajitas recipe
A simple midweek meal you can rustle up in half an hour. These fajitas are spicy, but you can tone down the heat if you prefer. Remember, once you add the sour cream, it makes it less hot.
Tips
- You can vary the fillings as you please. Chopped tomatoes with coriander (cilantro) and chopped spring onions (scallions) work well.
- Instead of sour cream, you could use mayonnaise.
Ingredients
For the filling- 2 tbsp olive oil
- 2 large onions, sliced
- 1 yellow pepper, sliced
- 1 red pepper, sliced
- 2 cloves of garlic, crushed
- 1 red chilli, sliced
- 1 green chilli, sliced
- 2 tbsp Cajun seasoning
- 2 skinless chicken breasts, sliced into strips
- 4 flour tortillas
- 4 tbsp sour cream
- 2 avocados, chopped
- 1 red onion, chopped
- 4 lime wedges

Step-by-step
- Heat the oil in a large frying pan, then cook the onions and peppers over a medium heat for 5 minutes.
- Stir in the garlic and chillies, cook for a further 5 minutes, stirring all the time.
- Add the Cajun seasoning and chicken strips. Mix everything together, and cook over a medium heat for 5 minutes, or until the chicken is cooked through.
- To serve, heat the tortillas in a dry frying pan or microwave. Add the chicken mixture, then add the avocado, onions and sour cream. Squeeze over the lime juice and serve.
