Capri S. Cafaro’s Apple Cheddar Pie
This Apple Cheddar Pie recipe is New Hampshire inspired. New Hampshire is an important source of agricultural production, particularly apples, which it produces more than 24 million pounds of annually. Dairy also plays a major role in the state’s ag economy, contributing over $50 million in revenue each year.
This sweet and savoury recipe is as American as apple pie, but what makes it truly an authentic representation of New Hampshire is the addition of cheddar cheese and a cracker crust.
Ingredients
- 40 cream crackers
- 100 g granulated sugar
- 165 g unsalted butter, melted
- 2 tbsp tap water
- 900 g apples, peeled and sliced into thin wedges
- 50 g brown sugar
- 1.5 tbsp cornflour
- 1 tsp ground cinnamon
- 0.5 tsp ground ginger
- 0.2 tsp ground cloves
- 0.2 tsp ground nutmeg
- 6 slices of Cheddar cheese

Step-by-step
For the crust
- Preheat oven to 200°C / gas mark 6 / 392 °F
- Place crackers in a food processor and run until crackers are crumbled with an even consistency
- Add 50g (1.8 oz) of the granulated sugar to the crumbs and pulse to combine
- Pour melted butter (approx. 6 tablespoons) and water into the top of the food processor one tablespoon at a time while still running. Combine slowly in the processor until crumb mixture has a dough texture
- Pour crust mixture into a pie plate and press mixture into plate to create an even crust
- Prick the crust evenly with a fork
- Place pie plate with crust in the fridge to chill
For the filling
- In a large bowl, combine apples, remaining granulated sugar, brown sugar, spices, and cornflour, ensuring the dry ingredients evenly coat the apples
- Remove crust from fridge
- Arrange apples in crust in a swirl or rose design
- Brush apples with the remaining 2 tablespoons of melted butter
- Place pie in oven and bake for 45 minutes until browned and evenly cooked
- Let cool for approx. 45 minutes, then serve warm, topping each slice with a slice of Cheddar cheese that should melt onto the filling for a finishing touch
