Perfect roast potatoes recipe
A decent roast potato is a key part of any roast dinner. Here James Ramsden shares with us his top tips for achieving the perfect 'crunchy-on-the-outside-fluffy-on-the-inside' spud.
Ingredients
- 1 kg Roasting potatoes
- 1 Large wedge of Beef Dripping or oil
- 1 pinch Salt & Pepper

Step-by-step
- Peel and chop the potatoes
- Part boil in slightly salted water for about 10 minutes
- Leave the potatoes to cool and dry completely
- Heat the beef dripping in a pan and add the potatoes
- Season with salt and pepper turning the potatoes around in the dripping
- Place in a preheated oven at 190c for about an hour
- Finish with a sprinkle of sea salt and serve
