Perfect roast potatoes recipe

A decent roast potato is a key part of any roast dinner. Here James Ramsden shares with us his top tips for achieving the perfect 'crunchy-on-the-outside-fluffy-on-the-inside' spud.

Step-by-step

  1. Peel and chop the potatoes
  2. Part boil in slightly salted water for about 10 minutes
  3. Leave the potatoes to cool and dry completely
  4. Heat the beef dripping in a pan and add the potatoes
  5. Season with salt and pepper turning the potatoes around in the dripping
  6. Place in a preheated oven at 190c for about an hour
  7. Finish with a sprinkle of sea salt and serve
