Griddled prawns with guacamole recipe
Shell-on prawns griddled to pink perfection, garnished with thick wedges of juicy lime and lemon. Serve with guacamole and crusty bread. Why not make your own guacamole using this recipe rather than buying it from a store? Nothing beats fresh guacamole!
Ingredients
- 12 large shell-on raw prawns
- 1 tsp olive oil
- 0.5 lemon, juice only
- 200 g pot of fresh guacamole dip
- 4 lemon wedges
- 4 lime wedges
- 4 slices crusty bread

Step-by-step
- Place the prawns in a shallow dish, add the olive oil and lemon juice and toss together. Season with a little salt and ground black pepper.
- Heat a griddle pan or barbecue and when hot add the prawns. Cook for 8-10 mins, turning once until the prawns have turned bright pink.
- Heap the prawns onto a platter and serve with the guacamole, lemon and lime wedges and some crusty bread to serve.
