Levi Roots' hot and fruity Caribbean coleslaw
Levi says: "A million miles away from those heavy creamy coleslaws, this is one to wake up your taste buds. It’s fruity, hot and even healthy. I could eat this just on its own it’s so delicious. And it’s a wonderful contrast to all that hot barbecued meat. Make a big bowlful!"
Ingredients
- 0.5 Savoy cabbage, cored and shredded
- 0.5 white cabbage, cored and shredded
- 0.5 red onion, peeled and sliced wafer-thin
- 0.5 small mango, peeled and flesh cut into matchsticks
- 3 tsp French Mustard
- 100 ml cider vinegar
- 8 tbsp light brown sugar
- 105 ml olive oil
- 0.5 tbsp hot sauce (we recommend Reggae Reggae)
- 2 red chillis, halved, seeded and cut into fine slivers

Step-by-step
- Put the mustard in the base of a large bowl and stir in the vinegar and sugar, whisking as you do so.
- Add the oil and hot sauce, then season with salt and pepper. Toss in the cabbage, onion, mango and chillis and mix well. Taste for seasoning.
