- 1 mango
- 0.5 lime, zest and juice
- 4 mint leaves, roughly chopped
- 1.5 tbsp dark rum
- 1 sprinkle caster sugar, to taste

Step-by-step
- Carefully remove the flesh from the mango and roughly chop. Place the chopped mango into a deep bowl.
- To the chopped mango, add the zest, lime juice and mint leaves.
- Using a hand-blender (or free-standing blender), carefully blitz the ingredients together until the consistency is smooth throughout.
- Add the rum, stir, and then add the caster sugar, to taste. (You may not need to add any at all.)
- Pour the mixture into a freezable container and place in the freezer for about 7 hours, until solid.
- To serve, remove the granita from the freezer about 5 minutes before serving, to soften a little, then using a fork, continuously scrape away at the surface of the granita until you get a light fluffy texture. Scoop this into martini glasses, or even shot glasses and garnish with a small mint leave. Serve immediately.
